Mini Mascarpone Cupcakes With Frosting & Sprinkles

I ALWAYS use the Mini Mascarpone Cupcake recipe by Giada De Laurentiis. They make for some amazingly moist and delicious cupcakes! I don't care for the Strawberry Glaze that she uses in this recipe...so I always make my own. This time I used a delectable, whipped frosting. Soooooo good! 

P.S. Don't be scared by the amount of butter...

sometimes you gotta ignore the ingredients and appreciate the deliciousness!!! =)

mmmm cupcakes

There is nothing that satisfies my sweet tooth more than a cupcake. 

They are my favorite dessert to make and my absolute favorite dessert to eat! I love that they are small, elegant, and customizable! I tend to cook mini cupcakes a lot more because they are bite-size and adorable (I'm a fan of everything miniature). One of my favorite mini cupcake recipes is Mascarpone Mini Cupcakes by Giada De Laurentiis. They are moist and delicious. I exclude the strawberry glaze featured in the recipe- I tried it the first time I made this recipe and I was not impressed. Instead I use any frosting- store bought or handmade (I prefer handmade).  I have tried a handful of different frosting recipes but two of my favorites are Vanilla Buttercream Frosting and Lemon Buttercream Frosting.
