Look at this little beggar...


You know what he really really reeeeally wants? 
My daily breakfast smoothie. It's packed with a ton of goodies and keeps me full for hours:

6 oz. organic coconut milk (I use Silk)
1 teaspoon organic extra virgin coconut oil (I use Trader Joe's)
1 or 2 scoops of protein powder, depending on the brand (I use Aria)
1/3 cup organic frozen fruit (I use raspberries, blueberries, or a tropical mix)
1 frozen organic banana
1 teaspoon organic raw honey

Optional:
chia or flaxseeds
(I prefer flaxseeds over chia - i hate having them stuck in my teeth)

Blend and enjoy!

So I finally caved in & got some coconut oil! 

After reading all of the benefits on pinterest I figured it was time to jump on the bandwagon. 
I've used it in my hair as a mask and I plan on using it in a breakfast smoothie tomorrow 
(fyi: subbing the raw eggs for protein powder - the thought of drinking raw eggs turns my stomach).

recipe: one pan perfection

If you saw my instagram (@cheryl_clements) post last night you were probably drooling.

This is a favorite dish in my household. It's made with fresh ingredients, it smells divine, and it tastes heavenly. 
It takes minutes to prepare, it bakes low and slow, and the leftovers are even better.

Ingredients
1 package of chicken thighs+ 1 package of drumsticks
sea salt + freshly ground black pepper + olive oil 
1 big bunch fresh basil, leaves picked
2 big handfuls of NatureSweet sunburst and cherub tomatoes
about 8 cloves of garlic, roughly chopped
1 fresh red chilli, finely chopped
2 cans cannellini beans, drained
splash of white wine
½ lemon

Directions
Preheat your oven to 350°F. Season chicken with s+p and put them into a snug-fitting pan in one layer. Throw in all the basil leaves, then chuck in your tomatoes. Scatter the garlic into the pan with the chopped chilli. Add a splash of white wine, squeeze half the lemon, and drizzle over some olive oil. Mix around a bit, pushing the tomatoes underneath. Place in the oven. After 30 minutes, add the cannellini beans to the pan. Cook for an additional hour, until the chicken skin is crisp and the meat falls off the bone. 

I serve mine with rice, but you can also serve it with mashed potatoes or pasta.

Donate Don't Dump


Well, school is slowly coming to an end (is it May yet?!) and I have recently started my internship. I am interning with Donate Don't Dump - have you heard of it? It is an amazing Non-Profit Organization to help alleviate hunger and to save our environment! I heard of this organization last year during their food distributions and I was immediately interested in what they stood for. 


There are so many people that are going hungry in the US, and there is so much wasted food being dumped into our landfills. Did you know that 1 in 4 kids within the US is suffering from food insecurities? And recovering only 20% of wasted food would feed 25 million people daily? This is so disheartening and discouraging. 

Cal State San Marcos (my college) is the largest Chapter of Donate Don't Dump. I was amazed when I was told that students could receive approximately 20 pounds of fresh food, twice a month, for free. I just participated in my first Donate Don't Dump food distribution. Everyone who stopped by was so grateful and appreciative. Some students explained that they have not had food in their fridge for the last few days. It really put everything into perspective for me. I have been in such a good mood since then, I cannot stop talking about it! It felt so great to help and I cannot wait until the next distribution!

resolutions

Every year we make New Years resolutions but do we all really follow them? No. I think the majority of us tend to make drastic resolutions which aren't realistic and in the end we just forget them altogether.

This year I resolve to be more health conscious. I didn't want to lose a certain number of pounds, put a number on how many times I went to the gym in a week, or promise that I wouldn't eat cupcakes. Let's be honest, I'm gonna eat that cupcake. Really, it was all about being mindful and trying to incorporate better behaviors and foods into my diet.

This week I got onto the juicing & smoothie train. If I can pack a bunch of vegetables, fruits, protein, fiber, and omega 3's into one cup, I am all for it!

I have been making a lot of recipes that I pin on pinterest. I'll be sure to post more of the lucky winners that get a spot in my recipe book. For now, I leave you with the green smoothie that I posted on my instagram, you can find the original post here.


Ingredients:
1 frozen sliced banana
1 Tablespoon peanut butter
1/2 cup 0% Vanilla Chobani Greek yogurt
1 cup Unsweetened Vanilla Almond Breeze
(or any other kind of milk)
4 cups baby spinach (or more, or less)
Side Note: I also added a bit of honey 

Directions:
Combine all ingredients in a blender and blend until smooth.

Nutritional stats:
350 calories, 10g fiber, 21g protein
